📍 [77th Kansai Tea Competition Judging Panel]

📍 The 77th Kansai Tea Competition was held at the Uji Tea Hall on August 8th, 6th, and 7th. 🍵 A total of 8 entries were submitted to the competition, spanning five tea varieties: ✅ Regular Sencha ✅ Deep-Steamed Sencha ✅ Kabusecha ✅ Gyokuro ✅ Tencha, from six prefectures: Gifu, Aichi, Mie, Shiga, Kyoto, and Nara. Judging began with the appearance of the tea leaves, then progressed to 👉 Aroma (the aroma of the leaves), 👉 Water color (the color of the tea), and 👉 Flavor (the taste of the tea). Tencha, the raw material for matcha, also features unique evaluation criteria, such as "dark color" (the color of the tea leaves when steeped in hot water), which is not found in other tea varieties, requiring more specialized judging. 🌿 [Hand-rolled Tea Processing Technique Training Session] Held 🌿 On July 7th, the Uji Tea Processing Technique Preservation Association held a technical training session at the Kyoto Prefectural Tea Research Institute's Hand-rolled Tea Processing Factory. The midsummer temperatures exceeded 18°C. Furthermore, the heat of the charcoal roasting furnaces inside made the practical training a veritable "battle against the heat." To preserve and pass on the Uji method of hand-rolled tea, members worked closely with the tea leaves, following the example of veteran members. 🔹Under the expert's techniques, the tea leaves naturally grew and took on a beautiful shape. 🔹Meanwhile, beginners, despite being at the mercy of the tea leaves, worked diligently to master each technique. While much of the sencha and gyokuro tea we drink every day is machine-rolled, it originally originated from the "hand-rolled" method. Learning about this hand-rolled tea processing technique will deepen your understanding of the current machine-rolled tea processing process and the deliciousness of tea. When you pour hot water into a teapot, the tea leaves gently unravel.
