Traditional techniques and technological innovations have improved the quality of tea and developed "Uji matcha," Japan's representative tea variety, leading to the creation of "Uji sencha" and "Uji gyokuro." "Uji tea," which includes these three tea varieties, has spread throughout Japan. Currently, the Kyoto Prefectural Tea Chamber defines "Uji tea," and tea businesses in the prefecture are delivering the traditional taste both domestically and internationally.
